Image
Nutrition and Food Science International Journal - Juniper Publishers Mini review The people in industrialized countries have experienced a dramatic increase in obesity in recent times. Prevalence of obesity has doubled in the last 25 years. In the United States, 17-th on the list of most obese places in the world - average BMI 28.8 Kg/m2, more than 60% of reproductive-age women are overweight and 35% are obese, representing a 70% increase in pre-pregnancy obesity. In Romania, 75th on the list- average BMI is 22.2 Kg/m2, the lowest average BMI in the European Union (9.4% obesity in 2016). [1] One of three Romanians is overweight, and one of four is obese. There are over 3.5 million obese in Romania. The highest obesity rate is recorded in Moldova, where the percentage is 23.8%. Only 10% of them see a doctor. Only one percent are included in a national obesity education program [2]. Not all ethnic groups are at equal risk. Of particular concern is the rapid increase in adolescent over

Influence of oligochitosans and highly molecular chitosan on Lactobacillus bulgaricus cultivation - Juniper Publishers

Image
Nutrition and Food Science International Journal - Juniper Publishers Abstract It was established that decrease of oligochitosans with molecular masses 7.0, 25.4, 45.3 kDa concentration in the process of Lactobacillus bulgaricus cultivation leads to fermented dairy product pH reduction and titratable acidity increase. Further increase in titratable acidity and decrease of lactic acid microorganisms’ amount was determined during the fermented dairy product storage process. Oligochitosans with molecular masses 7.0, 25.4, 45.3 kDa in concentrations interval from 0.0025 to 0.01 per cent did not exhibit prebiotic properties. Active acidity elevation and titratable acidity depression was observed at the chitosan with molecular mass 350 kDa concentration rises. Also increase of highly molecular chitosan concentration leads to elevation of lactic acid microorganisms’ total amount, which was more than three degree as many as total count of lactic acid bacteria in control sample. Cardiovascular Risk as a Context of Care - Juniper Publishers

Image
Nutrition and Food Science International Journal - Juniper Publishers Abstract Cardiovascular diseases stand out in terms of high mortality and the association of various cardiovascular risk factors. It is inferred that these involve a context of care with the interrelation of factors that accompany a situation of individual and/or collective cardiovascular vulnerability. This context demands a review and clarification of concepts and the development-based care protocols are in theory s to guide health policies and targeted assistance programs for health promotion and cardiovascular disease prevention in the world. Keywords: Cardiovascular risk; Context; Care; Health; Prevention of diseases; Promotion of Health. Opinion Cardiovascular diseases stand out in terms of high mortality and the association of various cardiovascular risk factors, being the main cause of death in the world, with more than three quarters of these occurring in low- and middle-income countries [1]. Child Care Food Safety Hand Hygiene: The Role of the Director - Juniper Publishers

Image
Nutrition and Food Science International Journal - Juniper Publishers Abstract In the United State over 15 million children attend a childcare facility annually. These children are 3.5 times more likely to contract a foodborne illness than children cared for in other settings. Proper hand hygiene practices have been identified as the most important practice to mitigate the spread of foodborne illnesses. Thus, the aim of this study was to explore hand hygiene training opportunities given to childcare food handlers in childcare facilities; as well as explore what food safety training childcare directors currently possess. Results showed directors received food safety training yet did not always pass the training along to their employees. A lack of written hand hygiene policies was identified, as well as lack of childcare employee training for hand hygiene on the topics of hand washing and glove use. It is recommended that childcare directors communicate the importance of proper hand hy
